Low temperature refrigeration for stabilising wine
Tartaric acid, which is naturally found in wine, forms crystals and precipitates at low temperatures. To avoid this quite natural and harmless phenomenon, but viewed as unsightly by consumers, cooling machines are used to lower the wine to freezing temperature. Special scrapers prevent the formation of ice on the cooling evaporator so that the machine maintains high efficiency. The cooled wine causes the tartaric acid to precipitate and stabilises. Sfoggiatech has been manufacturing these cooling systems for many years. The machines in the range use eco-friendly refrigerant gases and are also used to control fermentation during the harvest.
