A technological process widely used in the industry for processing fruit is clarification by flotation. Flotation consists of introducing inert gases into a tank where the juice is stored. The gas then rises to the surface taking all the suspended solid particles with it, thus clarifying the product. This type of technology is very widespread due its low running costs and the speed of the process.
