Ricotta is a whey cheese obtained by heating whey to about 85-90°C. This temperature allows the whey proteins to coagulate and form the white ricotta flakes. Whether extracted manually or separated from the whey by an automatic process, ricotta can be homogenised in advance or packaged directly.
